Pork, leeks and maple caramelized apples one pot
Ingredients
- 1 pork fillet of 680 g (1 1/2 lb)
- 30 ml (2 tablespoons) of old-style mustard
- Salt and pepper, to taste
- 15 ml (1 tablespoon) of canola oil
- 3 Cortland apples, peeled, pitted, and sliced into quarters
- 3 leeks sliced into rings of 5 cm (2 inches)
- 45 ml (3 tablespoons) of maple syrup
- 180 ml (3/4 cup) of chicken broth, without added salt
- Preheat the oven to 350°F (180°C).
- Brush the pork fillet with old-style mustard and season with salt and pepper.
- In an oven-safe pan, heat up the oil over high heat. Brown each side of the fillet until golden. Set aside on a plate.
- In the same pan, brown the apples and leeks for 2 minutes at medium heat, stirring occasionally.
- Pour maple syrup and chicken broth. Let simmer for 5 minutes.
- Set the pork fillet in the pan and roll to cover well with the preparation.
- Continue baking in the oven for 15 to 20 minutes, depending on thickness, until a thermometer inserted into the centre of the fillet reads 155°F (68°C). Stir the leek mixture at mid-cooking.
- Remove pan from oven. Slice the meat and serve it with apples and leeks.
