In a pan, sauté sliced leeks in butter for 2 minutes. Add diced pears, pistachios, cranberries, and rosemary. Cook for 1 minute while stirring often.
Set Brie cheese on an oven-safe plate covered with aluminum paper or on a plate made exactly for this kind of cooking. Cover with leeks garnishing. Oven bake for 15 to 20 minutes. Cool down for 5 minutes before serving.
Chef’s note
You may also prepare leeks garnishing beforehand. It can be refrigerated well until the next day.
