Ingredients
  • 1  recipe of cold parmesan white sauce (see recipe below)
  • 125 ml (1/2 cup) of dried apricots
  • 125 ml (1/2 cup) of crushed hazelnuts
  • 30 ml (2 tablespoons) of maple syrup
  • 6 ham slices 0,5 cm (1/4 inch) thick
  • 18 asparagus
  • 15 ml (1 tablespoon) of olive oil

For the parmesan white sauce:

  • 90 ml (6 tablespoons) of butter
  • 90 ml (6 tablespoons) of flour
  • 500 ml (2 cups) of milk
  • 5 ml (1 teaspoon) of poultry seasonings
  • 60 ml (1/4 cup) of parmesan cheese
  • Salt and pepper, up to your taste
  • Nutmeg, up to your taste
Preparation

  • Preheat oven to 200°C (400°F).
  • Prepare the white parmesan sauce recipe.
  • In a casserole, melt butter. Add flour and whisk. Cook for 1 to 2 minutes, then gradually add milk. Mix until the sauce thickens. Remove casserole from heat and add poultry seasoning and parmesan. Mix well. Salt and pepper. Add nutmeg. Cool down.

Ham rolls:

  • Mix apricots, hazelnuts and syrup. Set aside.
  • Over a cutting board, set 1 ham slice and pour 15 ml (1 tablespoon) of white sauce. Add 3 asparagus and 10 ml (2 teaspoons) of apricots mixture.
  • Form a roll and tie it up with the butcher's string. Repeat everything with the remaining ingredients.
  • In a pan, heat oil and roast ham rolls for 2 to 3 minutes.
  • Set over a cookie sheet covered with aluminium paper and oven-bake for 10 to 15 minutes.
  • Serve right away.
Chef’s note

Sliced into individual portions, these rolls make great appetizer. With a sauce and crispy vegetables, it makes these appetizers worth of a great restaurant. Served with puree sprayed with white wine sauce, it changes this everyday meal into a beautiful festive day.
